Dietary guar gum effects on postprandial blood glucose, insulin and hydroxyproline in humans

Torsdottir I et al.

The Journal of Nutrition ยท 1989

In plain language

Guar gum added to a meal blunted the post-meal glucose rise, lowered the insulin response and slowed the initial rate of gastric emptying in healthy men. Two details matter: a 2.5 g dose already reached the threshold effect, and heating that destroyed viscosity abolished it, so viscosity is the active property rather than fiber mass.
